Dinners for Two Weeks--Not My Usual Post

I love Pinterest!  If you haven't found this site yet, you should check it out.  It's an online bulletin board, and you "pin" the things you see that you love.  I have lots of categories, some teaching related, lots craft related (lots of card ideas), funnies, dream rooms, and more.  My favorite is all the recipes I've found.  We've tried lots of new things lately.  Which brings me to the point of my post.  

Dinner is a stressful event in our house.  Mike, who loves to cook, gets home later than we do.  Unfortunately, this means if we want to eat at a decent hour, I'm cooking.  Some nights I'm too tired or I just can't think of anything.  As a result we tend to eat late or eat out way too often.  I've been pinning recipes, but often we don't have the ingredients or I don't have time.  This weekend we decided to be proactive and try something new.  

I found several people through Pinterest who prepare all their crock pot meals ahead of time and freeze them.  What an aha moment for me.  Yesterday, we picked a bunch of recipes and went shopping.  Our Costco bill was higher than normal, but we're hoping our eating out savings will more than pay for that!  Last night, we threw the ingredients in the crockpot for a breakfast casserole.  We invited my parents over for a brunch of breakfast casserole, Snickerdoodle muffins (another discovered recipe), fruit and bagels.  It was delicious, although we definitely woke up hungry after smelling it all night :)  

Then this afternoon, we planned and prepped 9 meals, not including the crockpot lasagna we prepared first for tonight's dinner.  Two of the meals, Teriyaki chicken and Orange Chicken, we combined all the ingredients in a Ziploc and threw in the freezer.  Those meals just need to be defrosted overnight and dumped in the crock pot.  

Along with those two meals, we cut/chopped all the veggies and garlic for the rest of the meals, so everything just needs to be cooked or thrown in the crockpot.




It only took us about two hours from start to clean up to prepare it all.  Plus it was fun to spend time together in the kitchen.  Usually it's one or the other of us cooking.  Now we have meals planned and prepped for this week and through Friday of the following week, with a couple days built in for leftovers. The meals we have a lot left over (like tonight's lasagna, I'm sure), we'll freeze for another meal in the future.  We are hoping being organized will lower our stress levels and give us more time to get things done and have fun as a family.  The other bonus is that these are all brand new recipes for us.  I'll keep you posted on how this works out.

Week one:
Sunday: Crockpot Lasagna
Monday: Roast with carrots and potatoes (crockpot)
Tuesday: Hobo Meatball Stew--This is supposed to be our only cold day this week
Wednesday: Hash with the leftover roast and potatoes
Thursday: Chicken Cordon Bleu (crockpot)  This one looks super easy, just layers in the crock pot.
Friday (meatless): Our only prepackaged food we bought.  We bought the battered cod at Costco, with french fries.  We've done salmon and talapia the last two meatless days.
Saturday: leftovers

Week Two:
Sunday:Turkey breast with stuffing and cranberry sauce
Monday: Orange chicken (crockpot)
Tuesday: Parmesan Chicken (crockpot) over pasta
Wednesday: leftovers
Thursday: Teriyaki Chicken (crockpot)
Friday: Cheese Tortellini

Sharing From the Heart Blog Hop

For some reason, I can't log into our group to get the links for the hop.  I'm not sure what's going on.  I'll try again before I go to work, but if I can't get linked up, I'm sorry.

My card this month uses Stella papers and Canvas Complements.  I used the February Stamp of the Month, Thoughtful Tidings for the sentiment.


I love these canvas shapes.!  They give texture and make cards and layouts a snap.

I also made tags for the teacher Valentine's gifts using the Stamp of the Month.  I used the Sweetheart papers.


 I found these adorable golden apples at Target and had to get them for the boys' teachers.

February Club Cards--Stella

These are the cards we'll be making this month.  You'll do two of each design.

Card #1  Card Chatter--Birthday and A Note for You stamps


Card #2 Canvas Complements and Card Chatter Birthday






This next card was inspired by a fellow CTMH consultant, Kandi Gallegos-Garcia.  Hers was a 3x6 card, so I played with my mine to get it on a standard card.  I used Fashionista stamps and the new CTMH flower embellishments, and Sparkles.  


This card was inspired by this card by Vicki.  I loved her card, but used Lagoon card stock and a straight sentiment instead of her adorable flagged one.  If you have some time, you should spend a little bit browsing her blog.  She's one of the most talented paper artists out there :) 


I must admit, I needed a lot of inspiration this month.  This card was inspired by Dawn and her card here .  I must admit, I was tempted to steal her card as is, but I did give it a little twist.  I used the February Stamp of the Month, Thoughtful Tidings.

February Club Pages--Stella


This month, we are using Stella papers and Canvas Complements.  These first two layouts have no stamping, but I love the texture the complements provide. I also added the Pewter Badge Buttons to the center of the canvas flowers.   The photos are the ones we had taken at the park this summer.  I was waiting for the right papers, and the colors in Stella worked perfectly.  







I haven't found the right photos for layout 3, but I will try to get that posted soon.  It uses 4 4x6 photos.  I will also post the cards for my card ladies later tonight.  I have 4 out of the 5 designs finished.

Long Beach Studio J Layouts

These are the last Studio J layouts for now.  I'll be doing more with this month's Studio J special (see below for details)!  I had one more layout I didn't post because it was Austin's birthday party, and I didn't want to post photos of that many other kids.

These are from our California trip this last summer.  I took the boys to the Long Beach Aquarium and on a harbor cruise.  We had so much fun!


Both these layouts were using the Elemental papers, yet they look so different.  I love the monochromatic look of the second one, and that it matches the photos so perfectly.
